We love this coffee for several reasons. First is the producer. José Ilder is a meticulous farmer that saw potential in growing the Colombia varietal with the natural shade trees in his farm (Colombia is a leaf rust resistant varietal). He and his family pick the ripest beans possible personally on their two hectare farm and he incentivizes his family by having them equal earners in his business. It's the way he managed to purchase his own farm and he employs this practice with his family. Lastly, he is an innovator and is currently growing more experimental varietals like pink bourbon, castillo, and tabi. His coffee as a pour over is almost like berry tea with brown sugar.
